Asian Pineapple Chicken

Pineapple, green pepper, and onion stir-fried with chicken. Seasoned with brown sugar, vinegar and soy sauce. Dish is perfect for any night of the week.
Ingredients -
1/4 cup firmly packed Brown Sugar
2 tablespoon Cornstarch
1/4 cup Vinegar
1 tablespoon Soy Sauce
1 (15 ounces) can Pineapple Chunks, drained
1 cup Green Bell Pepper, cut in strips
1 cup Onion, thin slices
1 tablespoon Peanut or Canola Oil
2 Boneless, Skinless Chicken Breasts
 
Preparation:

1. Combine sugar and cornstarch in medium bowl.

2. Slowly stir in vinegar and soy sauce.

3. Add pineapple, green pepper and onion to bowl, and set aside.

4. Heat oil in wok over medium heat until oil is almost smoking.

5. Add chicken and stir fry until chicken is tender and white.

6. Add pineapple mixture to wok. Stir until well mixed.

7. Cover and simmer over low heat 15 minutes.
